Vegan Grilled Chickpea Patties

The Recipe

Vegan Grilled Chickpea Patties

Ingredients

1 can chickpeas, drained

5.3 ounces / 150 g sweet potatoes, grated

1 shallot, finely chopped

1 garlic clove, minced

3.5 ounces / 100 g oat flour (or ground oats)

1/2 teaspoon salt, dash of pepper

1 tablespoon harissa spice

1 teaspoon paprika powder

To serve:

3 squash, sliced

olive oil for cooking

Ajvar or any other dipping sauce you desire

Instructions

1. Heat 1 tablespoon of olive oil in a pan. Add minced garlic, chopped onions and grated sweet potatoes. Stir-fry for a few minutes.

2. In a food processor grind chickpeas until smooth. Add to a bowl and combine with sweet potatoes, oat flour, salt, pepper and spices.

3. Form small patties and brush with oil.

4. Grill the patties and squash on a BBQ grill or in a skillet with some olive oil until golden brown. Serve with dipping sauce. ENJOY!
