Vegan protein tofu bread
Ingredients
14 ounces / 400 g semi-firm tofu, scrambled
1 cup / 150 g almond flour
1 1/4 cups / ground flaxseeds
1/4 cup / 60 ml water
1/3 cup / 40 g blanched and slivered almonds
2 tablespoons Hemp seeds (sub in sesame seeds)
1.5 teaspoons baking powder
dash of ground coriander powder, 1/4 teaspoon fennel seeds (optional), dash of caraway (optional)
Instructions
1. Preheat oven to 350 °F / 180 °C.
2. In a medium bowl mix all ingredients and knead by hand until smooth.
3. Lightly grease a bread baking pan and transfer dough into it.
4. Bake for about 35 to 45 minutes, until golden brown. ENJOY!
