Vegan pea quiche with asparagus and tofu-bacon
Ingredients
For the crust:
2 cups / 300 g whole wheat flour
1/2 teaspoon salt
1 tablespoon vegan cream cheese
4.6 ounces / 130 g vegan butter
6-8 tablespoons plant-based milk
1 tablespoon vegan parmesan cheese (optional)
For the filling:
1 1/2 cups / 300 g silken soft tofu
8 ounces / 227 g defrosted peas
2 tablespoons chopped fresh parsley
1 garlic clove
salt and pepper to taste
Instructions
1. In a medium bowl combine all ingredients for the crust and knead by hand until smooth. Put into fridge for about 30 minutes.
2. Meanwhile prepare the filling. In a blender or food processor mix tofu, peas, parsley and garlic until smooth. Season with salt and pepper.
3. Preheat oven to 350 °F / 180 °C.
4. Prepare a piece of parchment paper on a flat surface. Roll out the dough and transfer to a tart baking pan. Bake for about 12 minutes.
5. Carefully add the filling on top of the crust and bake for another 30 minutes or until center is set.
6. Serve with grilled asparagus, cooked tofu-bacon and a green salad. ENJOY!
