Nothing is more American than a Burger. With this pea burger you can keep things healthy, but trust me, this burger is just SO GOOD! I love eating peas! They are sweet and flavorful, packed with proteins and so versatile!
The Recipe
Vegan pea burger with ricotta (makes 5 medium sized burgers)
Ingredients
For the brioche buns:
1 cup / 155 g all-purpose flour
3/4 cup / 110 g whole wheat flour
1 teaspoon active dry yeast
pinch of salt
2 tablespoons vegan butter
1/2 cup / 120 ml water
1 tablespoon honey (sub in syrup)
For the patties:
2 cups / 260 g defrost peas
1/2 medium red onion, finely chopped
2 garlic cloves, grated
2 tablespoons fresh parsley, chopped
1 cup / 100 g chickpea flour
salt to taste
Toppings:
almond ricotta (about 1 tablespoon per burger)
grilled asparagus
5 slices of vegan bacon, cooked
Ketchup or BBQ-sauce to taste
Instructions
1. For the buns mix both flours, yeast, salt, butter, honey and warm water. Knead by hand until dough is smooth. Form 8 medium sized buns. Let rise for about 1,5 hours. Preheat oven to 350 °F / 180 °C. Brush buns with plant-based milk and bake for 15 minutes.
2. In a bowl combine peas, onion, garlic, parsley, salt and chickpea flour. Knead by hand until ingredients stick together. Form 5 medium sized patties. In a pan heat 2 tablespoons olive oil and cook patties on both sides until golden brown.
3. Serve the burgers with grilled asparagus, cooked bacon and almond ricotta (about 1 tablespoon per burger).
