Vegan Crumble Buns (German Streusel)

These warm, fluffy and sweet vegan buns with buttery crumbles remind me of German bakeries and my Dad. Because whenever he walks by a bakery and sees them he needs to buy one. So I'm enjoying these today, while thinking of you Dad! 







The Recipe

Vegan Crumble Buns (German Streusel), makes 8 buns

Ingredients

For the buns

3 1/8 cups / 380 g all-purpose flour

1/4 cup / 55 g sugar

3/4 cup / 180 ml plant-based milk (I used oat milk)

1 teaspoon lemon zest

1/4 cup / 55 g vegan butter

2 teaspoons active-dry yeast

For the crumbles

1 cup / 200 g all-purpose flour

3/8 cups / 85 g sugar

1/2 cup + 1 tablespoons / 120 g vegan butter

Instructions

1. In a bowl combine all ingredients for the buns and mix by hand until smooth.

2. Line two baking trays with parchment paper. Divide the dough into 8 equal pieces and roll buns. Place them on the trays (cover loosely with a kitchen towel) and let rise for about 1.5 hours or overnight, when you want them for breakfast.

3. In another bowl combine the ingredients for the crumbles and knead by hand. Put the bowl with the crumbles into the fridge.

4. Preheat oven to 350 °F.

5. Put the crumbles on top of the buns. Bake for about 20-25 minutes or until lightly golden brown. They taste best warm or the day they are made. ENJOY!
