Vegan Chocolate Cookies

Homeschooling project number 749024: let the kids bake some vegan chocolate cookies for mummy! The recipe is kids-proven and easy to make. The cookies taste delicious and are topped with peanut butter, chocolate hazelnut spread and peanuts. Because mommy deserves every bit(e) of it!









The Recipe

Vegan chocolate cookies

Ingredients

6 teaspoons flax meal

6 tablespoons plant-based milk

12 tablespoons butter

12 tablespoons coconut sugar

6 tablespoons white sugar

30 tablespoons all-purpose flour

12 tablespoons dark baking cocoa powder

1.5 teaspoons baking powder

12 tablespoons chocolate chips

Peanut butter, chocolate hazelnut spread and peanuts to top the cookies

Instructions

1. In a bowl combine flax meal and plant-based milk. Let sit for a few minutes and then add all other ingredients and knead by hand until smooth.

2. Preheat oven to 350 °F / 180 °C.

3. Line a baking tray with parchment paper. Divide the dough into 12 equal balls and transfer them to the baking tray. Press the balls flat with your hand. Top with peanut butter, chocolate hazelnut spread and peanuts if desired.

4. Bake for about 12-15 minutes or until golden brown. ENJOY!
