Vegan cheeseburger spring rolls (makes about 16 rolls)
Ingredients
16 vegan spring roll sheets
1 shallot, finely chopped
16 ounces / 453 g of plant-based ground
1 teaspoon olive oil
4 small cucumber pickles, chopped
8 ounces / 227 g of vegan cheddar shreds
vegetable oil for frying
Instructions
1. In a pan heat olive oil. Add chopped shallot and plant-based ground and cook for about 1o minutes. Season with salt, pepper ans paprika powder.
2. Transfer spring roll sheets to a flat surface. Begin layering with 2-3 teaspoons plant-based ground, then 2-3 teaspoons cheese and 1 teaspoon cucumber pickles.
5. Fold both ends to the center and then roll tightly.
6. In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Transfer the rolls to the pan and fry them golden brown, 1 to 2 minutes per side. Transfer them to a wire rack.
Serve with tomatoes, salad, ketchup or whatever you like! ENJOY!
