Vegan Passion Fruit Mousse

Monday morning and I'm still dreaming of last nights dessert! Oh my gosh. SO GOOD! It's a simple 4 ingredients passion fruit mousse. Finish each glas of light mousse off with mango jelly for a truly delicious dessert. 











The Recipe

Vegan passion fruit mousse

Ingredients

For the mousse:

6 passion fruits

4 tablespoons sugar

1/2 teaspoon agar powder

180 g of coconut cream (top part of canned coconut cream)

2 cups whipped almond cream

For the topping

10 tablespoons mango juice

1/2 teaspoon agar powder

Instructions

1. Cut the passion fruits in half and add the juice to a pan. Combine with sugar and heat on medium heat until sugar is dissolved. Add agar powder and mix until smooth. 

2. In a mixing bowl whip coconut cream with a high speed mixer. Repeat with the almond cream. Combine passion fruit sauce, whipped coconut cream and whipped almond cream. Fill into glasses and put into fridge. 

3. In a pan bring mango juice to boil. Add agar powder and mix until smooth. Divide the mango sauce over the passion fruit mousse. Put into fridge for about 4 hours. ENJOY!
