Vegan cheesy oven baked potatoes with peas and chickpeas
Ingredients
8 medium sized potatoes
180 g vegan shredded cheddar cheese
110 g of vegan sour cream
1/2 cup oat milk (sub in other plant-based milk)
1/2 teaspoon paprika powder
salt to taste
1/2 cup / 60 g peas (fresh or frozen)
1/2 cup / 60 g chickpeas (from a can, drained)
more vegan cheddar cheese, bread crumbs or vegan parmesan cheese to sprinkle over the potatoes (optional).
Instructions
1. Preheat oven to 410 °F / 210 °C.
2. Wash potatoes and place on a baking tray. Bake for 1 hour.
3. In a pan combine vegan cheddar cheese, oat milk and sour cream. Cook on medium heat until cheese starts to melt and sauce gets creamy. Stir in peas and chickpeas. Season with paprika powder and salt.
4. With a spoon make a hole into the potatoes. Season potatoes with salt. Fill in the cheese sauce. Sprinkle with more cheese and bread crumbs. Bake for another 5-10 minutes until golden brown. ENJOY.
