Vegan Artisan Whole-Grain Bread with Pumpkin Seeds

I really love baking bread and especially that the whole house smells amazing! Nothing cozier, especially in these crazy times! It's an easy delicious bread, which needs a little time. But trust me, it's worth the wait! The secret to get a nice crust is to use a iron cast dutch oven. Follow this important step to get the best bread ever!







The Recipe

Vegan artisan whole-grain bread with pumpkin seeds

Ingredients

2 1/2 cups / 300 g whole-wheat flour

3 1/3 cups/ 400 g all-purpose flour

2 1/2 teaspoons / 15 g salt

2 teaspoons / 6 g active-dry yeast

2 cups / 470 ml water

1/3 cup / 55 g pumpkin seeds (sub in sunflower seeds)

Instructions

1. In a big bowl combine whole-wheat flour, all-purpose flour , salt, yeast, pumpkin seeds and water. Knead by hand for about 5 to 10 minutes or until dough is smooth. Line a bowl or bread pan with parchment paper and let dough rise for about 1 hour at room temperature. Put the dough into the fridge overnight.

2. The next day get the dough out of the fridge at leave for another two hours at room temperature.

3. Place your dutch oven (with lid) in the oven. Preheat oven to 500 °F / 260 °C.

4. Carefully put the bread into your dutch oven (Be very careful and protect your hands. It is very hot!) and bake for 1 hour. After 30 minutes turn the temperature to 420 °F / 215 °C.
