Vegan Spinach Naan

This vegan spinach naan is so good, that we already had it twice this week. It's easy to make and ridiculously delicious! Enjoy with your favorite curry or soup for the most satisfying meal. YUM!





The Recipe

Vegan Spinach Naan (makes four naan)

Ingredients

2 1/2 cups / 310 g all-purpose flour

1/2 teaspoon active-dry yeast

1/3 cup / 75 g vegan Greek style yogurt

1/4 cup / 60 ml warm water

1/4 cup / 60 ml warm plant-based milk (I used full fat oat milk)

1 teaspoon sugar

1 teaspoon baking powder

1/4 teaspoon salt

5.3 ounces / 150 g frozen spinach

6 tablespoon olive oil

3 garlic cloves, minced

Instructions

1. Put spinach in a microwave-safe bowl. Heat until spinach is hot all the way through. Allow to cool. 

2. In a bowl combine active-dry yeast with sugar, warm oat milk and warm water. Let sit for a bit, then add flour, yogurt, baking powder, spinach and salt. Knead by hand until smooth. Cover with a dump towel and allow to rise for at least 2 hours.

3. Mix 6 tablespoons olive oil with minced garlic. Divide dough into 4 equal balls. Roll out each about 1/4 inch (0.6 cm) thick. 

4. Heat a cast iron skillet on hight heat. Add one naan bread and cook for about 1- 2 minutes, until bubbles form. Flip over, brush with garlic oil and cook for another 1-2 minutes, until golden brown. Brush both sides with garlic oil. Season with a little salt, if desired. Repeat with remaining dough.
