Vegan chocolate and cherry galette
Ingredients
For the crust:
1 cup / 150 g all-purpose flour
1/4 cup / 25 g almond flour
4 tablespoons vegan butter
4 tablespoons vegetable shortening
2 teaspoons sugar
1/4 cup / 20 g dark baking cocoa powder
3-4 tablespoons cold water
For the filling:
14.8 ounces / 420 g cherries, pitted
1-2 tablespoons sugar (or more to taste)
1 tablespoon vegetable oil + 1 tablespoon syrup to brush the galette
Instructions
1. In a bowl combine flour, almond flour, sugar, vegan butter, vegetable shortening, cocoa powder and water. Knead until smooth. Put into fridge for at least 1 hour.
2. Preheat oven to 350 °F / 180 °C.
3. On a lightly floured surface roll out pastry. Combine pitted cherries and sugar and place them on top of the pastry. Fold the edges up and over the fruits. In a small bowl mix vegetable oil and syrup. Brush galette with the mixture. Bake for about 30-40 minutes or until golden brown.
4. Serve with your favorite ice cream or dust with powdered sugar, if desired. Slice and ENJOY!
