Vegan Chocolate Crêpes With Whipped Cherry Cream

It's about time for some French pancakes. Vegan chocolate crêpes with whipped cherry cream. Perfect for a special breakfast or as a dessert. Chocolatey, creamy and loaded with sweet cherries! What's not to love?








The Recipe

Vegan chocolate crêpes with whipped cherry cream (makes about 8 crêpes):

Ingredients

For the crêpes:

1 cup / 125 g all-purpose flour

1 teaspoon baking powder

2 tablespoon vegetable oil, such as sunflower oil

2 cups / 500 ml plant-based milk (I used oat milk)

1/4 cup / 25 g dark baking cocoa

1/3 cup / 70 g sugar (or to taste)

For the whipped cherry cream:

1/3 cup / 60 g cherries, pitted

4.5 ounces / 130 g whipped vegan cream 

sugar to taste (optional)

Instructions

1. Blend cherries with a food processor. Carefully combine with whipped vegan cream. Add sugar to taste. Put into fridge.

2. In a bowl combine all ingredients for the crêpes and mix with a high-speed mixer.

3. Heat a pan over medium heat. Scoop about 2-3 tablespoons for each crêpe. Tip and rotate pan or us a crêpe spreader to make it as thinly as possible. Brown both sides and serve hot with whipped cherry cream, cherries and chocolate sauce, if desired. ENJOY!
