Vegan Black Forest Ice Cream Bars

Nothing better than a refreshing treat on a hot day! These vegan Black Forest ice cream bars are made with healthy ingredients and satisfy every sweet tooth. Bite into creamy chocolate and cherry ice cream and ENJOY!





The Recipe

Vegan Black Forest ice cream bars (yield 12 bars)

Ingredients

For the chocolate ice cream:

1/4 cup / 40 g pitted dates, soaked overnight in water

1/4 cup / 60 g peanut butter (sub in any other nut butter you prefer)

1/4 cup / 60 ml canned coconut cream (the firm part)

1/8 cup / 30 ml plant-based milk (such as oat, almond or soy)

1,5 tablespoons dark baking cocoa powder

For the cherry ice cream:

1 cup / 150 g cherries, pitted

1/2 cup / 70 g whipped coconut cream

syrup to taste




about 24 tablespoons whipped coconut cream

dark chocolate 

Instructions

1. In a food blender combine dates, nut butter, coconut cream, plant-based milk and cocoa powder. Mix until smooth. Pour into rectangular molds, so that they are half full. Put into freezer until firm.

2. Blend cherries in a food blender and combine with whipped cream. Add syrup to taste. Pour on top of the chocolate ice cream and freeze until firm. 

3. Add whipped coconut cream on top and freeze again. Dip into melted dark chocolate and freeze. Allow to thaw a little before serving. ENJOY!
