Vegan Sourdough Bread with Hummus

As a German I'm of course obsessed with bread. So sometimes it just has to be a good slice of homemade sourdough bread. Topped with hummus and roasted veggies. And I'm happy!









The Recipe

Vegan sourdough bread with hummus and roasted bell peppers

Ingredients

For the sourdough bread:

Use this recipe or use your favorite store bought bread

For the hummus:

1 can (15.5 ounces / 440 g) of chickpeas, drained

1 small garlic clove

3/4 teaspoon salt or to taste

juice of 1 medium lemon (about 3 tablespoons)

1/8 / 30 ml olive oil

For the bell peppers:

1 tablespoon olive oil

5 garlic cloves

16 ounces / 1 lb / 454 g of mini bell peppers

1 medium red onion, sliced

salt and pepper to taste

3/4 cup / 1 big handful fresh parsley, chopped

Instructions

1. In a food processor combine chickpeas, garlic clove, lemon juice and olive oil. Mix until smooth. Season with salt and set aside.

2. Heat 1 tablespoon of olive oil in a pan. Add garlic, onions and bell peppers and stir-fry until golden brown. Season with salt and pepper. Garnish with chopped parsley.

3. Spread the hummus on the bread and top with roasted bell peppers. ENJOY!
