Vegan Lentil and Tomato Patties

Vegan lentil and tomato patties. These are a perfect and easy light lunch, packed with proteins and flavors. Serve with a green salad and your favorite dip and ENJOY!





The Recipe

Vegan lentil and tomato patties (about 4 servings)

Ingredients

4.4 ounces / 125 g red lentils

4.4 ounces / 125 g canned chickpeas, drained

3 garlic cloves

5.3 ounces / 150 g canned chopped tomatoes, drained

1/2 teaspoon curry powder

1/2 teaspoon paprika powder

1/2 teaspoon baking powder

6 tablespoons bread crumbs (or more as needed)

2 tablespoons tomato mark

salt and pepper to taste

vegetable oil for cooking

Instructions

1. Bring water to boil and cook lentil for about 6 minutes until soft. Drain them.

2. In a food processor combine cooked lentils, chickpeas, garlic, tomatoes, spices, baking powder, tomato mark and bread crumbs. Blend until smooth. Season with salt and pepper. Form small patties (add more bread crumbs if needed).

3. In a pan heat vegetable oil and fry patties until golden brown. Serve with vegan sour cream and a green salad. ENJOY!
