Vegan Apricot Scones (yield 8 scones)
Ingredients
1 3/4 cups / 225 g all-purpose flour
2 tablespoons / 60 g sugar
1.5 teaspoon baking powder
2 ounces / 60 g cold butter
3.9 ounces / 110 g plant-based yogurt
3.5 ounces / 100 g apricots, pitted and chopped
Instructions
1. Preheat oven to 410 °F / 210 °C.
2. In a bowl combine flour, sugar, baking powder and cold butter until crumbles form. Add the yogurt and knead until smooth. Then add the chopped apricots and carefully knead again.
3. Roll out the dough until about 1.5 inches / 4 cm thick. Cut into 8 pieces and bake for about 30-35 minutes.
4. Enjoy scones with vegan butter or cream cheese or even with ice cream, if desired. ENJOY!
