Vegan Spicy Thai Basil Tofu

Vegan spicy Thai basil tofu. When I lived in Singapore, I had this EVERY WEEK at least once. It is just so so good! I remember one day when it was so spicy that it took me one hour to eat it...haha. So at home you can easily adjust the amount of chilies you use. It's a simple, quickly prepared Thai dish which is packed with flavor and one of my favorites! Hope yo enjoy!




The Recipe

Ingredients

2 tablespoons vegetable oil

2 garlic cloves, minced

1 lb / 454 g firm tofu, cubed

1/2 yellow onion, chopped

1 cup fresh Thai basil

3 fresh red hot chillies (or less if you want it less spicy)

1 cup / 130 g green beans

2 scallions, chopped

1/4 cup / 60 ml vegetable broth

2 tablespoons vegan Thai "fish" sauce

1 tablespoon soy sauce

1 tablespoon dark soy sauce

Instructions

1. In a skillet or pan heat 2 tablespoons vegetable oil. Add tofu and stir-fry until golden brown. 

2.Add beans, onions, garlic, chillies, Thai basil and scallions and stir-fry for a few minutes. 

3.Then add broth, vegan "fish" sauce and soy sauce. Let simmer for a few minutes. Serve with steamed rice. ENJOY!
