Vegan Sichuan style tofu is my go-to recipe when I want an easy weeknight dinner that is simple, delicious and healthy!
The Recipe
Vegan Sichuan style tofu
Ingredients
2 teaspoons vegetable oil
10 ounces / 330 g firm tofu, sliced
2 garlic cloves, thinly sliced
1 piece of ginger (1 inch / 2.5 cm), finely sliced
1 leek, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 ounces / 50 g bamboo shoots
1/2 teaspoon chili garlic sauce
2 tablespoons low sodium soy sauce
2 tablespoons Chinese black bean sauce
Instructions
1. In a small bowl combine chili garlic sauce, soy sauce and bean sauce for the sauce. Set aside.
2. Heat 1 teaspoon of oil in a pan over high heat. Add sliced tofu and stir-fry until golden brown. Dish out and set aside.
2. Heat up another teaspoon of oil and add garlic and ginger. Stir-fry until aromatic and then add leek, bamboo shoots and bell peppers. Stir-fry for a few minutes, then add tofu and sauce. Stir well until everything is combined. Serve with steamed basmati rice. ENJOY!
