Vegan Rainbow Sushi

My kids love colorful food. Because it's just more fun to eat it. So I'm always happy to prepare healthy fun food for them. Like these vegan rainbow sushi. The blue color comes from natural blue spirulina powder. Hope you love!







The Recipe

Vegan rainbow sushi

Ingredients

1 cup / 230 g sushi rice

1 1/2 /360 ml cups water

2 tablespoons rice vinegar

1-2 teaspoons blue spiraling powder

dash of salt

2 nori sheets

carrots, beetroot, tofu and avocado, thinly sliced

Instructions

1. In a pot combine rice and water and bring to boil. Add blue spiraling powder and let simmer (with a lid) until rice has soaked all water. Fluff with fork and add rice vinegar and salt. Allow rice to cool.

2. On a flat surface make the sushi. First add the rice to the nori sheets until the sheets are fully covered. Add slices of avocado, tofu, carrots and beetroot. Roll tightly and cut into pieces. Enjoy with soy sauce, ginger and wasabi, if desired.
