The Recipe

Vegan lemongrass tofu balls

Ingredients

12 ounces / 350 g silken firm tofu

4 spring onions, finely chopped

2 tablespoons teriyaki sauce

1 teaspoon lemongrass turmeric paste

1/2 stalk of lemongrass, finely chopped

2 tablespoons ginger juice

salt and pepper to taste

1/2 cup / 60 g panko crumbs

2 tablespoons vegetable oil for cooking

Instructions

1. In a bowl combine tofu, spring onions, teriyaki sauce, lemongrass, turmeric paste, ginger juice, panko crumbs and knead by hand until well combined. Season with salt and pepper. Divide into 8 equal pieces and make balls.

2. In a skillet or pan heat 2 tablespoons of vegetable oil and stir-fry tofu balls until golden brown. Serve with steamed rice, stir-fried veggies and more teriyaki sauce, if desired. ENJOY!
