Vegan avocado and lime popsicles (yield 6 popsicles)
Ingredients
1 ripe avocado, mashed
juice and zest of 1 lime
1/2 cup / 110 g plant-based yogurt such as coconut, almond or soy
2/3 cups / 160 ml coconut milk
1/8 cup / 50 g maple or agave syrup
Instructions
1. Combine yogurt, coconut milk and syrup in a food blender and mix until smooth. Add about 2 tablespoons of the mixture to the molds of a popsicle form and freeze for about 1 hour.
2. Add mashed avocado to the remaining cream and mix until smooth. Divide evenly into the molds and freeze at least 4 hours. ENJOY!
