Vegan Tofu "Egg" Salad
Ingredients
14 ounces / 397 g firm tofu
5 tablespoons vegan mayonnaise
1/2 tablespoon mustard
1 tablespoon nutritional yeast
1 teaspoon apple cider vinegar
dash of turmeric
dash of crushed pepper
salt and kala namak salt to taste
1-2 tablespoons chopped chives to taste
Instructions
1. In a bowl combine vegan mayonnaise, mustard, nutritional yeast, pepper, turmeric and vinegar and mix until smooth.
2. Dice the tofu and add to the bowl. Combine all ingredients. Season with salt. Chop the chives and add them to the tofu salad. ENJOY!
