Vegan Spiced Double Chocolate Cake

You guys! I'm so excited to share this new recipe for a vegan double chocolate cake with you! It is incredibly moist, rich and chocolatey. Cardamom and cinnamon add a little extra spice and the creamy chocolate frosting makes it so indulgent. Trust me, it's totally worth the extra 3000 workouts you might wanna do afterwards....haha! 









The Recipe

Vegan Spiced Double Chocolate Cake

Ingredients

For the chocolate cake:

1 3/4 cups / 200 g all-purpose flour

3/4 cup / 110 g coconut sugar

1/2 cup / 40 g dark chocolate baking powder

1 tablespoon baking powder

1/2 cup / 120 ml vegetable oil (such as sunflower oil or coconut oil)

1 1/2 cups / 350 ml plant-based milk (I used oat milk)

1/4 cup / 50 g dark chocolate, melted

1 tablespoon almond butter

2/3 cup / 60 g almond flour

3.5 ounces/ 100 g vegan mini chocolate chips

1 teaspoon cinnamon powder

1/4 teaspoon cardamom powder

For the frosting:

5.3 ounces / 150 g dark chocolate

7 ounces / 200 g vegan cream cheese (I used a coconut based one)

maple syrup to taste (optional)

Instructions

1. Preheat oven to 350 °F/ 180°C.

2. In a bowl combine all ingredients for the chocolate cake and mix on high speed until smooth.

3. Pour the dough into a cake pan (I used a 8-inch cake pan) and bake for about 1 hour. Test with a wooden stick. It should come out clean. 

4. Allow the cake to cool down before removing from the pan.

5. In a bowl combine melted dark chocolate, cream cheese and maple syrup to taste. Mix until smooth. Spread immediately over the cake. Decorate with cocoa nibs if desired. ENJOY!
