Vegan Rustic Sourdough Olive Baguette (makes 2 baguettes)
Ingredients
2 cups / 250 g bread flour
2 cups / 250 g spelt flour
1/4 cup / 50 g active, bubbly starter
1 1/2 cups / 375 g warm water
1 1/2 teaspoons salt
1 cup olives
Instructions
1. Combine starter, flour, salt and water and knead by hand until smooth. Let it rise overnight at room temperature. Cover the bowl with a damp towel.
2. The next day transfer the dough to a floured work surface. Add the olives to the dough and gently fold them into the dough. Divide the dough into 2 equal pieces.
3. With floured hands form baguettes (twist them if you like) and place them on a baking tray (lined with parchment paper). Let rise again for about 1 hour.
4. Preheat oven to 470 °F / 260 °C. Bake baguettes for about 30 minutes or until golden brown. ENJOY!
