Vegan Hazelnut Madeleines with Chocolate and Cherries

Satisfying my sweet tooth today with these vegan hazelnut madeleines. They are moist and fluffy, loaded with chocolate chips and cherries and covered with dark chocolate. YES! It's all about the chocolate. And the hazelnuts. And the cherries! So delicious.








The Recipe

Vegan hazelnut madeleines with chocolate and cherries

Ingredients

2/3 cup / 75 g all-purpose flour

2/3 cup / 75 g sugar

6/7 cups / 100 g hazelnut flour

1 tablespoon dark baking cocoa powder

3/4 teaspoon baking powder

1/4 cup / 60 g vegan butter

1/3 + 1/4 plant-based milk (I used oat milk)

1/4 cup / 45 g vegan mini semi-sweet chocolate chips

1/3 cup / 45 g frozen cherries, chopped


3.5 ounces / 100 g of dark chocolate

freeze dried raspberries

Instructions

1. Preheat oven to 350 °F/ 180 °C.

2. In a medium bowl combine flour, sugar, hazelnut flour, baking cocoa, baking powder, butter and oat milk. Mix with a high speed mixer. Add chocolate chips and chopped cherries and combine with a spatula.

3. Divide the dough into the molds of a Madeleine baking pan.

4. Bake for about 30 minutes.

5. Melt dark chocolate. Dip the madeleines into the chocolate and sprinkle some freeze dried raspberries on top. ENJOY!
