Vegan Chocolate Chip Banana Cake with Cherries

I just love these over-ripe bananas waiting in the kitchen for me. Because that means I can bake banana bread! YEAH! This one is so moist and sweet. Loaded with chocolate chips and cherries for an extra treat!







The Recipe

Vegan Chocolate Chip Banana Cake with Cherries

Ingredients

2 1/2 cups / 300 g all-purpose flour

2/3 cups / 150 g sugar

3 teaspoons baking powder

1 over-ripe banana, smashed

6 ounces / 180 g vegan light butter

2/3 cups / 160 ml plant-based milk (I used oat milk)

5.3 ounces / 150 g vegan mini chocolate chips

5.6 ounces / 160 g frozen cherries, chopped

1 banana

Instructions

1. Preheat oven to 350 °F / 180 °C. 

2. In a bowl combine flour, sugar and baking powder. Add one smashed banana, vegan butter, plant-based milk and mix until smooth. Add chocolate chips and chopped cherries and mix carefully.

3. Pour the cake batter into a cake pan and tip with one sliced banana.

4. Bake for about 1 hour. ENJOY!
