Vegan Baked Cinnamon Donuts with a Raspberry Glaze

In love with these vegan baked cinnamon donuts with a raspberry glaze. They are moist, juicy, fluffy and the perfect afternoon treat. 








The Recipe

Vegan baked cinnamon donuts with a raspberry glaze (makes about 18 donuts)

Ingredients

For the donuts:

2 1/2 cups / 300 g all-purpose flour

1 1/4 cups / 250 g sugar

2 teaspoons baking powder

1.5 teaspoons cinnamon powder

1/2 cup / 110 ml sunflower oil (sub in any other neutral vegetable oil)

1 tablespoon apple cider vinegar

1 1/4 cup / 285 ml plant-based milk

For the glaze:

1 cup / 145 g raspberries

1/2 cup / 110 g coconut oil

3 cups / 360 g powdered sugar, or more if needed
Instructions

1. Preheat oven to 375 F°/ 190 °C.

2. In a bowl combine all ingredients for the donuts and mix until smooth. Pour the batter into a lightly greased donut pan and bake for about 15 minutes.

3. For the glaze mix the raspberries with a food processor or blender until smooth. Combine with coconut oil and refined sugar. If it is too thick, add a little bit plant-based milk. If it is to thin, add more powdered sugar. Spoon the frosting over each donut. Decorate with coconut flakes and dried raspberries if desired. ENJOY!
