Vegan Marble Banana Pancakes

Let's talk about these vegan marble PANCAKES, guys! A relaxed breakfast is definitely one of my most favorite must-do's on a Sunday morning. I just love being surrounded by my family, while everyone is happily munching on their warm pancakes. 












These pancakes taste so good! They are fluffy and the combination of banana and chocolate is the best! Serve with warm raspberry sauce, chocolate sauce and some fruits and you have the most satisfying breakfast ever!









The Recipe

Vegan marble banana pancakes (makes about 7 medium-sized pancakes)

Ingredients

For the light batter:

2 smashed over-ripe bananas

2 tablespoon of your favorite syrup (optional)

1 teaspoon baking powder

1 cup / 150 g all-purpose flour

3.5 ounces / 100 g soft vegan butter

1/2 cup / 125 ml plant-based milk (I used oat milk)

For the dark batter:

2 tablespoons dark baking cocoa powder

1/2 tablespoon syrup (optional)

Instructions

1. Combine all ingredients for the light batter in a bowl and mix with mixer on high speed until smooth. Transfer half of the batter into a second bowl. Add the cocoa powder and the syrup to one of the batters and mix.

2. Heat a pan on medium heat. Spoon about 1 tablespoon light batter on the center of the hot pan and form a circle with the spoon. Add alternately one tablespoon dark batter, one tablespoon light batter and one tablespoon dark batter. Cook until bubbles appear and gently flip over and cook until golden brown. Repeat with the remaining dough. (Note: I used a small round baking pan to get perfectly shaped pancakes!)

3. Serve pancakes with fruits, chocolate sauce, raspberry sauce or whatever you like! ENJOY!
